Variations in Indian Veg Khichdi Recipe

Khichdi comes with many variations as simple khichdi, masala khichdi or Sago/Tapioca pearls khichdi, rich dal khichdi based on the different region of India. Each locality has its own version as they use a different proportion of rice and dal, different spices and the variety of lentils to prepare the dish. Veg Khichdi recipe also made with many combinations like Tapioca pearls with yellow moong dal, Amaranth with moong dal, oats with dals and cracked wheat with yellow dal.

A rich and firm textured khichdi is my favourite. For that with one cup of rice, use 1/4 cup of Yellow lentil or dal and 1/4 of chopped vegetables of your choice and 3 cups of water. If you want to get more Flavor in your baby food just add some fresh coriander leaves or curry leaves which gives a beautiful aroma to the dish.

What are the main Things You have to Follow when You are making A Delicious Veg Khichdi?

This is a good recipe for every season.

When you are running out of time use Rice cooker or pressure cooker to prepare the dish.

For great taste use whole Indian spices like cloves, cinnamon, star anise, cardamom and bay leaf instead of ready-made garam masala powder. The whole spices leave a mild aroma and flavour to the rice and lentil dish.

You can add any sort of vegetables of your choice like carrot, potato, french beans, green peas, onions, tomatoes etc. It is also good to use a mix of different dals like yellow moong dal, Arhar dal or tur and chana or split green gram dal(Alls are Indian Lentils).

Cracked wheat with yellow dal khichdi is very good for weight loss to diet followers so You can use this dish If you are trying to lose weight just Replace the Rice with Crack wheat in the Same recipe.

For frying vegetables, I prefer to use pure ghee only as it adds a rich flavour to the dish. But you can use a combination of ghee and oil. At the same time, I must say that this instant one pot dish tastes equally good with vegetable oil also.

Depending upon the consistency of the dish the texture may be rich or soft. But by increasing the water quantity you can easily control the texture.

For serving you can use any pickle of choice and yoghurt or raita.

Why Am I Making This Dish?

My son Just loves khichdi. So I make this almost every week. This vegetable dal khichdi is suitable for babies from 8 months after introducing rice, lentils and vegetables separately. Instructions
  1. Take a soup pot.
  2. Put all the Rice,dal/lentil,potatoes,carrots,green peas,cauliflower,salt,sugar,turmeric powder and 5 cups of water.
  3. Close the pot with a lid and boil all the ingredients for 20 mins over the medium heat.
  4. Just after 20 mints open the lid of the pot and check.If the all vegetables,lentil and rice can be easily smash by a spoon that means alls are cooked now turn off the flame. Add more water if required.
  5. But if Vegetables,rice or dal any of one is hard to smash that means it's undercooked. Then cook all the ingredients like the same way for few more minutes.Add more water if required.
  6. Oce all done well then make a another frying pan heat enough and now put 1 Tbsp ghee or butter or olive oil to the pan over the low heat.
  7. Just then every quickly add Asafoetida,Whole Cumin seeds,Bay Leaf,grated ginger to the pan fry just for 2-3 mints over the very low heat.
  8. After 2-3 mins pour the frayed mixture over the pre boiled rice,dal and vegetables.
  9. Mix well all the ingradients.Now the super food one meal Khichdi is ready to serve.
  10. I like to serve this dish as hot as possible with some ghee and deep fried aubergine slices.You can d like me or can eat just like it is.
