As we all know most Indians are vegetarian and nowadays the trend is more. As a vegetarian, they consume vegetables only. Therefore those people who are vegetarian and trying to get into keto diet, they just don’t find much-eating options to maintain their diet. Because of this reason, nowadays many Indian vegetarian people are finding the new recipes to do vegan keto diet. This recipe is one of them. Most of the time Indian keto dieters make simple Bhindi bhaji or Bhindi masala recipe. This recipe is also a dry curry or BhIndi masala type of dish But not same as usually prepared by many. I used a HOMEMADE Maharashtrian kolhapuri curry paste to make this super delicious Okra recipe.

Why am I cooking this ladyfinger recipe In Indian way?

Okra or ladyfinger can be cooked in many ways. I tried to make this vegetable with Arabic spices which also taste good but not as good as Indian ladyfinger recipe. When I was in  An Arab country I learned many Arabic recipes there. A stew with okra is one of my favourite among them. One day I will share that recipe. But that recipe is non-veg one. Therefore  I was constantly searching for a vegetarian recipe to share on my blog as a keto diet recipe, which I luckily got from a Marathi magazine. But the spices they used on that recipe wasn’t keto friendly. Because of this, I decided to make another Maharashtrian curry paste to make this recipe and after cooking I find It just perfect.

Why should you eat this healthy veggie when you are on any diet or maybe not?

The slimy texture of ladyfinger no one like I know. Even I don’t like the slimy texture of leady finger otherwise it’s a really good vegetable for all not only for keto dieters. Okra or ladyfinger has the goodness of natural fibre which we all need for good health. I always recommend this superfood to many of my friends for their kids who have constipation problem. When my son was 3 years old he got a serious constipation problem and doctor suggested me to give him natural fibre-rich food especially Ladyfinger/Okra.

When he started to eat this it helped him a lot and he just healed by its nutritious properties. Many Keto dieters always face this constipation problem because of the high intake of  Fatty foods. I also recommend this superfood for them. And if you are a non-veg keto dieter you also can eat this dish. This recipe is fit for their diet too. Don’t worry about the taste of the dish.   • 250 Grams of Okra or ladyfinger
  • 1 Big Onion sliced
  • 1 Big Tomato chopped
  • 3 Tsp Kolhapuri curry paste
  • 1 Tsp Ground Turmeric powder
  • 1 Tsp Salt
  • 1 Tsp chopped garlic
  • 2 Tsp Coconut oil
  • TO MAKE THE KOLHAPURI CURRY PASTE FOR 250 GRAMS OF OKRA OR lLEADYFINGER
  • 2 Tsp full Fresh desicated coconut flakes or you can use dry desicated coconut
  • 1/2 Tsp/4.2 grams Whole black peppercorn
  • 1/2 Tsp/4.2 grams Cumin seeds Whole
  • 1/2 Tsp/4.2 grams Coriander seeds whole
  • 1/2 Tsp/4.2 grams Star anise whole
  • 1/2 Inch long/4.2 grams Cassia bark or cinnamon stick
  • 1/2 Tsp/4.2 grams Seeseme seeds
  • 1/2 Tsp/4.2 grams Cloves
  • 1 Any dry sweet red chilli deseeded
  • 1 Dry or fresh Bay leaf

Instructions
  1. Take a frying pan, make the pan hot.
  2. Put all the curry paste pieces into the hot frying pan and dry roast them for 2 minutes in very high flame and immediately after 2 minutes blend then in a blender with a little bit oil
  3. Now put 2 tsp coconut oil in the same hot frying pan.fromMake the oven flame slow otherwise the smells will burn.
  4. When the oil melts in the pan and coconutty smells come from the oil add the sliced the onions in the pan and fry for 3 minutes over the medium heat.
  5. Now after 3 minutes add chopped tomatoes and chopped garlic to the frying pan and fry for 2 minutes now add salt 3 tsp curry paste and ground turmeric to the pan and fry for another 4 minutes.
  6. Now add the ladyfingers to the pan and mix all the ingredients with ladyfingers very well.
  7. Do not cover the pan with a lid in this stage. If you do it the ladyfingers will mushy and slimy after cooking. Which we don't need.
  8. Fry the ladyfingers for 10 to 15 minutes and will mixes all the ingredients in the frying pan between every 5 minutes. it without
  9. After 10 to 15 minutes when all the slimy texture will go from the curry serve the dish hot with any flatbread or you can it without anything else.
