The word Polao or Pulav is the same. Pulao Rice is a Persian recipe. But I just made this rice recipe more delicious to flavour with some saffrons and rose water. The making process of this rice dish is easy and simple. And it can be made within a few minutes on any party day. The recipe itself is so flavourful and tasty that it can be consumed alone or with any mildly flavoured curry dish, which will not dominate the actual tastes or the flavour of the Rice dish.
Why I used Saffron and Rosewater both In This Indian saffron rice recipe?
Saffron is used as a flavoured and coloured agent from the ancient times. Uses of saffron are common in Middle Eastern and Meditorian recipes. The Actual recipe of saffron rice comes from Parsia. Saffron rice usually cooked in Vegetable broth with saffrons and some mild flavour simple spices. This rice dish is cooked all over the India and Pakistan with different names. Sometimes the saffron Rice cooked with sugar and eaten as a desert. But most of the time it cooked with little sugar and salt and serve as a side dish with any vegetable or non-vagitarian curries.
as we all know that artificial colour is harmful to our health so like other I flavoured and coloured my Rice dish with a natural healthy colour saffron. And rose water is also a very common Asian Ingredient to make the dish more flavourful. I use the rose water to make this rice flavour more aromatic. I also use sultanas or raisins and some cashew nuts to give the dish a little crunch and tastes. As like me, you can do the same and If you follow my steps you can also make a perfect Saffron rice for any lunch or dinner.

- 2 Cup Long Grain Basmati Rice
- 3 Tbsp Ghee or clarified butter
- 1 Tbsp Rose water
- 1/3 Cup Raisins /Sultanas
- 1 Tbsp Sugar
- 1/2 Tbsp Salt Or as per your taste
- 6-7 Cups Warm Water

- Boiled basmati rice with warm water for 15 mins over the high flame. Then strain all the water from rice when rice is properly cooked.
- Now take 1 cup of cooked rice mix the rice with saffron water and ½ tbsp sugar salt,1/2 tbsp rose water and keep the mixture aside.
- Now take the rest of rice and mix with a 1/2 Tbsp of salt and 1/2 Tbsp sugar and 1/2 Tbsp of Rose water.
- Take a big pot Layered the two colour of Rice into the pot and add 3 tbsp ghee on top and cover the pot with a wet towel and put the pot in very low flame for 5 mins.After 5 mins open the cover and decorate this dish with Soaked Raisins/Sultanas and few of Beautiful rose petals.
- Serve with any veg or non-veg curry.
