Ingredients
  • 4Medium Size Chinese Eggplant/Asian Eggplant
Cut the egg plants into slices or any shapes of your choice
  • 1 or 2Baby Shallots cut into slices
  • 4-5Cloves of Freshly chopped garlic
  • 2Tsp Finely sliced or chopped Red sweet chilli
  • 1Tsp Rice wine vinegar/Mirin
  • 1Tsp Lite soy sauce
  • 1/2Tsp Crushed Black pepper
I use 1 or 2 pinch or salt not more because lite soy sauce is quite salty.So use the salt carefully in this recipe.
  • 1/2Tsp SugerOPTIONAL
  • 1Tsp Roasted Sesame seed oil
  • 1Tsp Roasted sesame seeds
  • 1Tbsp Any Vegetable oil/I used extra lite olive oilOil you can use more or less in this dish.I used ! tbsp because I Air fry all the eggplant slices with little oil and suger before start the cooking.
  • 2Tsp WaterIf Required
For the Decoration need
  • 1Bowl of Hot steamed plain white Rice
  • 1/2Tsp Roasted sesame seeds to sprinkle from the top of the dish.
  • 1Tsp Chopped spring onions/Scallions
Instructions
  1. Take a frying pan.
  2. Make the pan heat enough.
  3. One the pan is hot put the oil into the pan and make the oil hot too.
  4. How to put chopped garlic and red chilis and pre-fried eggplant slices and shallots to the pan and fry over the very high heat just for few seconds.
  5. Then very quickly add soy sauce, Rice wine vinegar or mirin, sugar, salt and pepper and of course roasted sesame seeds and roasted sesame seed oils to the pan.
  6. Toss the all ingredients over the high flame and coat all the sauces with eggplants and other ingredients very well. do the tossing process within few seconds not more than it.and then turn off the flame.
  7. Now The stir-fry eggplant dish is ready to serve.
  8. Now serve the dish over the steamed plain white rice and sprinkle some sesame seeds and chopped spring onions/scallions from the top of the dish. To make the look of the dish more Delicious.
