This my way to make Mexican Cochinita Pibil Recipe. Though in Mexico they make the recipe with pork But I make it with lamb.

Ingredients
500GramsLamb or Goat meat with bone
5Cloves ofgarlic
1TspWhole Cumin seeds
1TspWhole coriander seedsor cilantro
1TspWhole Allsspice
1/2TspFresh or Dry Thyme
1/2TspWhole black peppercorn
1/2Tspchipotle chili paste
1BigBay leaf
1TbspChopped Cilantro or coriander leaves
2TbsbFresh Tomato juice
2TbspFresh orange juice
1TspFresh Lime juice
1TspSalt
2BigPeice of banana leaves or aluminium foil sheetFor wrapping the meat
Take hot pan put 1 tsp of oil into it.make the oil very hot then very quickly trun of the flame. Just after few secounds add 1 tsp sweet paprika powder to it and make the oil cool to use it in next step of the recipe.It’s a must have ingredient for the recipe. Actually it’s a Substitute of achiote seed which is a important ingredient to give it the original colour of the dish

Instructions
Take a dry frying pan and make the pan hot. And put all the dry ingredients into it like, cumin seeds, coriander seeds/cilantro seeds, Allspice and peppercorns, bay leaf. Dry roast all the ingredients and ground them in a coffee grinder.
Now take a big blender jar put other ingredients, ground powder and salt into it(except the banana leaves and meat. Blend all the ingredients make a smooth paste like constancy. Now the marination is ready for use.
Now take a big bowl and put meat and marination into it and mix well. put the whole marination with meat in the refrigerator ONE NIGHT BEFORE OF COOKING. If you have a no time to marinate it for a long time just marinate it for 2 hours before the cooking. But if you want the best flavour to marinate it for 24 hours before cooking.
At the cooking day remove the bowl from the fridge before 2 or 1 hours of cooking. The meat should be normal in temperature before start grilling. Now wrap the meat in the banana leaves or with the aluminium foil. and grill the met in a BBq griller for just 30 minutes.
But if you don’t have a BBQ Griller
Take a deep frying pan or cooking pot. Place The warped meat into it, Cover the pot and roast it in very low flame for 45 minutes and add 1 tsp of hot water after every 10 minutes to prevent the meat from burning. Flip the meat during this 45 minutes time. And cook the flavour from both sides.
After 45 minutes your RRoasted Cochinita Pibil will be Ready to eat. It this with the taco, Tortilla or with anything else. Enjoy the dish and fall in love with its flavour. I am sure you will.
