Authentic Rogan Josh Recipe with lamb | Easy Spicy Lamb Curry
This is an absolutely delicious and aromatic Kashmiri authentic Rogan Josh recipe with lamb or Indian goat mutton meat.

Ingredients
  • 500gram Lamb or Indian Mutton
  • 2Tbsp Mustard Oil
  • 1/2 cup Fried onion flakes
  • 1big Tomato puree
  • 1Tbsp Dry ginger powder
  • 1Tsp Garlic paste
  • 1Tsp Turmeric powder
  • 1Tbsp Sweet Paprika powder
  • 2Pinch Asafoetida powder
  • 1Tbsp Fennel seed powder
  • 1Tbsp Rogan josh Garam masala Powder
  • 1Tbsp Salt
  • 1Pinch Sugar
  • 1Cups Hot Water
  • 2Tbsp chopped coriander or cilantro leaves
Instructions
  1. Place a wok/kadai on gas flame…
  2. Put Mustard oil on it and heat.
  3. Add the lamb to the wok and fry on high flame for 2 minutes.This process will lock all the juices of the lamb inside it.
  4. Now add Fried onion flakes and Asafoetida powder mix all the spices with lamb or Indian mutton and fry for 2 mins in slow gas flame.
  5. Then add Red chilli powder (Sweet Paprika) fry 2 sec.
  6. Then add Tomato puree and fry well until the raw smell of tomato goes.
  7. Now add Garlic paste and Turmeric powder.
  8. mix all the spices with lamb and Cook for 4 minutes or till oil starts separate from the spices.
  9. Then add 1 ltr of hot water into the Kadai or wok. then after quickly add Dry ginger powder, Fennel seed powder, Garam masala Powder, Salt, sugar, mix well.
  10. Now, wait for the bubble comes and just then quickly covered the wok/Kadai with a lid and slow the gas flame.
  11. covered the wok/Kadai with a lid for 1 hour or until the lamb becomes tender and Soft. slow the gas flame while frying lamp pieces.
  12. Now Kashmiri Rogan josh recipe with lamb meat is ready to serve.
Recipe Notes

Tips

Rogan josh garam masala powder-Need 1/2 Tsp. Cinnamon powder,1/2Tesp Green cardamom powder,1/2 Tsp ClovePowder, 1 big dry bay leave,1 big black cardamom pod,1 big whole mace. Blend all the spices in a spice blender to make a fine powder once it’s ready you will get your own Rogan josh garam masala for the recipe.
